Preheat oven to 350℉ and line a sheet pan with parchment paper.
In mixing bowl, add olive oil, honey, oats, cinnamon, ginger, and nutmeg. Stir well with a spatula to ensure all oats are coated with olive oil and honey.
Scrape out granola on the parchment paper lined sheet pan and spread out evenly.
Put the sheet pan in the oven. Bake for 10-12 minutes, then remove the pan, stir, and return it to the oven. Cook for another 10-12 minutes, or until the granola is golden brown.
Let granola cool for 30-45 minutes undisturbed.
