Dough Prep
- Combine the flour and honey in your mixing bowl.
- In a separate bowl, add yeast to lukewarm milk and whisk until dissolved. Once dissolved, add the mixture to the dry ingredients
- With a stand mixer, use the paddle attachment and mix at the lowest speed for about 1 minute or until the dough roughly forms a ball.
- Switch to the dough hook and mix on medium-low speed for about 6 minutes. Add flour or milk as needed until the dough is smooth, soft, and barely sticky.
- Transfer dough to a lightly floured surface and work into a ball.
- Move the dough to a clean, lightly oiled bowl large enough for it to double in size. Tightly cover with plastic wrap and allow it to rise for 2 1/2 hours. Dough can be refrigerated for up to 3 days if not cooking right away.
Filling Prep
- On the stovetop, add a little olive oil to a pot. While the pot is heating up, dice the apples and add to the pot. Cook apples for about 5 minutes.
- Add cornstarch and whisk until thoroughly mixed. Add maple syrup and cook until thickened, about 15- 20 minutes.
Baking
- If the dough was refrigerated, remove it about 3-4 hours before baking. On a floured work surface, roll out the dough until it is about 1/2 in thick.
- Spread filling onto the surface of the dough, leaving a small border. Roll dough into a tight log.
- Cut the log into 1 1/2-in. slices. Place rolls in a cake pan or on a sheet pan.
- Preheat oven to 350℉. Bake for 15 to 20 until buns are golden brown. Use leftover filling as topping or add topping of choice.
